What cooking and frying equipment do UAE food producers use?
Cooking and frying equipment heats food in bulk by boiling, braising, steaming, roasting or frying, either batch by batch or on a continuous belt. It is part of the UAE food processing equipment family, and this page covers the cooking stage in depth: which machine suits which product, what the UAE food code asks of it, and how to buy it.
| Equipment | Typical UAE use | Key specification | Electrical or gas standard |
|---|---|---|---|
| Tilting kettles and boiling pans, with or without stirrer | Rice, sauces, soups, curries in central and airline kitchens | Working volume, jacket heating (steam, electric, gas), stirrer, tilt and pour height | IEC 60335-2-47 (electric boiling pans); EN 203-2-3 (gas); EN 13886 for kettles with powered stirrer |
| Bratt pans and multi-purpose cooking pans | Searing, braising, shallow frying, scrambled egg at volume | Pan area, depth, tilt, pressure option | IEC 60335-2-39; EN 203-2-8 for gas bratt pans |
| Batch deep fryers | Restaurants, hotels, catering, small snack producers | Oil capacity, recovery time, filtration, auto basket lift | IEC 60335-2-37 (electric); EN 203-2-4 (gas) |
| Continuous fryers | Chips, nuts, samosas, coated chicken and snack plants | Belt width, oil volume and turnover, heat exchanger, fines removal | Machine-specific; ask for the risk assessment |
| Combi and steam ovens | Hotel banqueting, central kitchens, cook-chill | Grid capacity, steam generation, core probe, cleaning cycle | IEC 60335-2-42 |
| Spiral and linear industrial ovens | Cooked chicken, meat and ready-meal components | Throughput, steam and dew point control, belt width | Machine-specific |
| Griddles and chargrills | Burgers, kebabs, flatbread toppings | Plate area and material, zones, fat drain | IEC 60335-2-38; EN 203-2-9 and 203-2-10 (gas) |
| Blanchers and cookers for vegetables | Fresh-cut and frozen vegetable lines | Residence time, steam or water, cooling section | Machine-specific |
Ingredients often arrive already portioned from cutting and slicing machines or mixed in mixing and blending equipment, and coated or formed products may come off extrusion and forming lines. Fried doughs and baked goods share a hall with bakery ovens and proofers in many plants.
What does the Dubai Food Code require when cooking at volume?
The Dubai Food Code sets cooking and cooling targets that the equipment must be able to hit and record. Raw foods of animal origin must reach a core temperature of at least 75°C, or an equivalent time and temperature (clause 3.2.8), checked with a calibrated thermometer.
- Cooling: cooked high risk food held chilled must fall from 60°C to 20°C or less within two hours, then to 5°C or less within a further four (clause 3.2.11). Large kettle batches need blast chillers and blast freezers sized for the batch, not just a cold room.
- Hot holding: cooked food served hot is held at 60°C or above.
- Allergens: allergen-free food must not share cooking equipment such as deep fryers, grills or sandwich makers (clause 3.4.3), so a dedicated fryer is often needed.
- Non-halal food: where it is permitted, non-halal food needs designated equipment and is cooked in designated ovens, kept physically separate (clause 8.7.3). Pork preparation in Dubai is limited to approved settings such as 5-star hotels and clubs.
- Cleaning: heavy equipment must be movable or kept clear of walls, and non-food surfaces of stoves and ranges kept free of ledges and crevices.
Abu Dhabi and the other emirates have their own codes, so confirm details with the local food inspector.
How do you choose fryers and kettles for UAE kitchens and plants?
Choose on batch size, heating medium, oil management and cleaning, then on how the unit fits the extraction and fire protection above it. A fryer that is easy to filter and drain cuts oil cost and fire risk; a kettle with a powered stirrer and tilt saves labour and burns.
Oil handling
Built-in filtration extends oil life and keeps fines from burning. Used cooking oil should go to licensed collection rather than drains: in July 2025 Dubai Municipality signed an agreement authorising BiOD Technology, a DUBAL Holding subsidiary, to collect used cooking oil and fats, oils and grease across Dubai for biodiesel. Kitchens also need grease traps and interceptors on wash-down drains.
Extraction and fire protection
Fryers, griddles and chargrills sit under extract hoods fitted with fire suppression, gas shut-off interlocks and Class K or wet chemical extinguishers nearby. In the UAE, fire products and installers need civil defence approval; the guide to UAE civil defence approval explains certificates, and suppression hardware is covered under fire fighting equipment. Confirm kitchen hood requirements with your emirate's civil defence authority.
Heat and utilities
UAE kitchens are hot, so gas or electric connected load, steam supply, make-up air and cooling for control panels decide what can run at once. Gas supply and leak detection belong with gas distribution systems.
Which standards apply to cooking and frying equipment in the UAE?
As of 2026 there is no UAE type approval specific to commercial cookers or fryers. Makers declare conformity to IEC 60335-2 parts for electric units and EN 203 parts for gas units, while the food authority inspects the kitchen.
| Requirement | Applies to | Authority |
|---|---|---|
| Dubai Food Code clauses 3.2.8, 3.2.11, 3.4.3 and 8.7.3 | Cooking, cooling, allergen and non-halal practice in Dubai | Dubai Municipality |
| IEC 60335-2-36, -37, -38, -39, -42, -47 | Electric ranges, fryers, griddles, pans, convection and steam ovens, boiling pans | IEC (declared by maker) |
| EN 203-1 with parts 2-2, 2-3, 2-4, 2-8, 2-9, 2-10 | Gas ovens, boiling pans, fryers, bratt pans, griddles, chargrills | CEN |
| EN 13886 | Cooking kettles with powered stirrer or mixer | CEN |
| Civil defence approval of suppression systems and installers | Kitchen hood protection | Emirate civil defence |
EN 203-2-4:2021 with amendment A1:2023 is the current European fryer part, read with EN 203-1. The ECAS and EQM conformity guide covers any electrical item on MoIAT's regulated list.
Who supplies cooking and frying equipment in the UAE?
Commercial cooking blocks come through foodservice equipment distributors and kitchen contractors, while industrial fryers, spiral ovens and blanchers come through processing line suppliers. Ask who designs the layout, who installs gas and extraction, and who services the unit.
Brands on ListGCC include Berto's (Italian modular cooking lines, tilting boiling pans, bratt pans and gas and electric fryers), GEA (CookStar spiral ovens for cooking, steaming and roasting meat, poultry and ready meals), Marel (spiral and modular ovens for poultry and meat further processing) and Turatti (vegetable blanchers and cookers with cooling sections). Wider kitchen fit-outs often draw on commercial kitchen equipment dealers. To compare offers, post your cooking equipment requirement.
What affects the price and lead time of cooking equipment in the UAE?
Capacity and heating medium set the base price; automation, oil systems and hygienic construction add to it.
- Volume: kettle litres, fryer oil capacity, oven kilograms per hour.
- Heating: gas, electric, steam or thermal oil, and the site utilities they need.
- Controls: core probes, recipe programmes, data logging for HACCP records.
- Oil management: filtration, oil top-up and fines removal on fryers.
- Site works: extraction, suppression, gas piping and drains.
Stocked fryers and kettles can arrive within days; continuous fryers and spiral ovens are engineered to order and take months including factory testing, shipping through Jebel Ali and commissioning.
